Today is a much better day for cooking in my kitchen. I am making one of my kids absolute favorites, spaghetti and meatballs.
Bear with me on my measurements. I rarely measure anything so everything is approximate. I have started with 2 jars of store-bought sauce and added fresh oregano(1 tbsp), thyme(2 tsp) and rosemary (1 tsp)from my herb garden. Dried herbs are fine, I just like to grow my own. I had to use dried basil(same as oregano) because mine in the garden is not growing well yet. I also added onion powder(1 tsp), a clove of roasted and mashed garlic, some red wine(about 1/2 c) and a few chopped up, dried tomatoes(5 0r 6 slices) from last summer's garden.
For the meatballs I will mix a pound of ground beef and 1/2 pound of sausage, 7 or 8 crushed Ritz crackers, a couple teaspoons dried Italian seasoning and an egg. Brown and crumble about 1 cup of this mix for the sauce, form the rest into balls (I use a cookie dough scoop) and cook in a skillet till done.
Serve the meatballs on top of the pasta of your choice, top with sauce and cheese. With a salad and a loaf of garlic bread, supper is ready.
Taste this as you make it, don't be afraid to add other seasonings to your taste. Cooking is about imagination and fun!
