Crock Pot Pork Chops

Here we are on day 5 of the heat wave and I am looking for something good that I can cook in the crock pot to keep the heat to a minimum. I have 4 thick cut pork loin chops that would be good on the grill, but it is just to hot. A nice pork roast or tenderloin would work, too.

Quarter (peel in you need to) enough potatoes for you family and put these in the bottom of the crock pot. Season the pork with pepper, garlic powder, and Italian seasoning(this is all purpose to me, it has everything you need in it) and brown in a skillet. When the pork in brown put it in the crock pot and add 1 can cream of mushroom soup and some beef broth. Cook on low 8-10 hours.

I will serve this with the fresh veggies now coming out of my garden (and Daddy's garden). I may fry some squash (I don't have any green tomatoes big enough to fry, yet) and make a cucumber salad with mayo, vinegar, sugar and some crisp fresh cucumbers.

I will soon begin canning and freezing my fresh veggies. Is anyone interested in the procedures? If so, I will post those, too.
