Just a Casserole. . .

Tonight I am fixing what my kids call Mom's Favorite. My mom used to make this when I was a kid and we loved it. I made a few modifications and my kids love it, too.

Brown, drain and rinse a pound of ground beef. Mix in a can of corn or a cup of frozen corn, 1 cup of shredded cheese and a can of cream of mushroom soup. Pour into a casserole dish. Top with sliced boiled potatoes (tater tots or frozen hash browns fill in nicely here) and bake at 350 for 35 minutes. TA-DA! Instant supper, almost no work. It freezes well, so double the recipe and have supper one night next week, too.
