My kids do, they love meatloaf. We rarely have leftover meatloaf around here and if we do, it makes great sandwiches later.
I start with a pound of ground beef, an egg, 1/2-3/4 cup seasoned breadcrumbs, just enough liquid (milk, broth, etc) to moisten the breadcrumbs, onion powder, garlic powder, chili powder, black pepper, a Cajun seasoning to taste, mix well and pack tightly into a loaf pan. Sometimes I put 1/2 the meat, make a hollow, fill with cheese and then the rest of the meat. Bake at 350 for 45 minutes, top with a mixture of 1 c. ketchup and 1/4 cup brown sugar and bake another 15-20 minutes. Let sit 10-15 minutes before you cut it.
I will make mashed potatoes and peas (or maybe Lima beans) to go with this. I was planning to make a cake but Mom brought me some chocolate caramel rice krispie treats, so those will be dessert.
