Tonight I am making blackened pork chops on the grill. If you haven't figured out by reading my posts, we like things spicy around here. This dry rub recipe can be toned down for the kids or spiced up for the adults by adjusting the amount or red pepper.
Blackening Spice
1tbsp thyme, 1tbsp oregano, 3tbsp paprika, 1tbsp ground red pepper, 1 tbsp black pepper, 1 tbsp salt. We like ours a little sweet, so I will add a couple tsp brown sugar, but that is up to you.
Preheat the grill till HOT. Rub your meat with the spice mix(this is good on pork, steaks, fish, just about anything) and grill. Turn the grill down when you put the meat on, but make sure it is hot to start with. The spice rub will smoke so this is a dish best fixed outside.
Steam or parboil small new potatoes (or cut up peeled potatoes) and toss in a grill pan, spray with oil or melted butter and sprinkle with the dry rub. Cook till brown and crisp. This can be done in a skillet on the stove if you'd rather.
Add a green vegetable or salad and supper is ready.
