I found this recipe in a cookbook and it looked really good so I'm giving it a try. If you try it, let me know what you think and if you have any suggestions.
Start with a beef roast and enough water to cover it in your crock pot. Add 2-3 tbsp dried Italian seasoning, plus a bay leaf and a little extra garlic. Mix in 1 package dry Italian salad dressing mix. Cook all day in the crock pot, shred and serve on hoagie rolls. I am going to saute some onions and bell peppers for mine, and maybe top with a little mozzarella cheese. I will serve this with potatoes (My hubby thinks I must have potatoes at every meal) and some green beans from last summer's garden.
A note at the bottom of the recipe suggested using a can of beef broth for part of the water, reducing the liquid down after the meat is done and serving it like a french dip.
My father-in-law has started digging new potatoes in his garden, I may go get some of those, I love creamed new potatoes! (who am I kidding, I love all new potatoes) It is time to start looking for the beginnings of those yummy fresh vegetables from people who put their gardens out early or at the farmers market.
the shredded beef was good, but not really italian tasting. I ate mine with horseradish like any roast beef sandwich, but it smell good while it cooked.
